You can try using other types of baking molds, if you have any. Just make sure when you put batter it isn't too deep, you may also need to correct baking time if molds you are using are bigger.

Wow. Looks fantastic! I love the addition of almonds in it (big almond fan). The presentation is also great. Presentation can make a big difference when you're serving someone because they get the "ooohs" out before even trying it, and it sets the stage well.

I also like using breadcrumbs for such recipe more than flour, but didn't have any prepared when made this recipe.

I love cauliflower prepared this way! I also do the same thing with broccoli. I usually steam the cauliflower or broccoli instead of boiling, and fry in oil instead of butter. It's interesting that you dip the florets in egg first and in flour afterwards; I do the opposite - egg, then flour (or breadcrumbs). I'll have to try your method and see if the results are different.

My mother makes the okroshka with buttermilk and some kvas...have you heard of that?

I also just remembered eating Lithuanian cold borscht in Lithuania! When I was little, my family spent summer vacations in a little Lithuanian town for four years. One time we were in Vilnius waiting for our train back to Moscow and went to have lunch at a restaurant near the train station. I remember eating cold borscht and being particularly impressed that the potatoes (which I know your version doesn't use) came not as chunks boiled in soup, which is what I was used to, but as a baked potato served separately on the side, for us to cut up as we saw fit and add to the soup ourselves.

Thanks for showing me how to fillet the herring. I finally got some salt herring from an on-line store. I never made it myself before, but I am going to surprise my family. I made it the way my father used to make it. He was from Russia. I like a lot of Russian food, but find that his recipes are often different from other Russian recipes I see. His borscht and salat olivier were both different from the recipes on this site. The way he made the herring is: soak fish in cold water, changing water several times, for 12 or so hours, or overnight. Clean and bone fish. Cut fish in pieces. Put fish in bowl. Pour regular vegetable oil over fish, to cover. Add some sliced onion and some peppercorns. Put in fridge for a couple of days if you can wait that long.
This makes me think of my childhood, thanks for the instructions...

I was so happy to see this recipe! I ate this in a Russian restaurant 4 years ago and always wondered what the secret sauce was and it was mayonnaise! It tastes really good when it mixes with the cheese. I think they called it 'French Meat' on the menu if I recall. Anyways, I just made it tonight and loved it so much!!!! Great recipe!!

Oh, I used to love this dish! In my opinion, it is the sauteed onions that really make this dish what it is. I don't eat meat any more but I still crave the taste of pasta and sauteed onions, combined. My solution? Make kasha varnishkes, a mix of pasta, buckwheat, and sauteed onions. Yum!

Do you ever make shchi with homemade sauerkraut (kvashennaya kapusta)? I find that store-bought sauerkraut in the US has some sort of chemical flavor that I can't quite used to, so we usually make our own. I wonder if cooking the store-bought sauerkraut hides the off taste.

I love this cake! So moist and tasty. We call it "Den' i noch'" - Night and Day - because of the alternating light and dark layers. My batter recipe is similar except I use sour cream rather than condensed milk. I also use sour cream for the frosting although once I get better at making custard, I am going to try using that. In Russia, my mom and grandma typically used custard-based frosting for this cake except it came from a mix and all you needed to do was add milk (I think) and heat until boiling. For the topping, I typically use grated chocolate and/or chopped walnuts.

This is the recipe that ALL of my children and husband LOVE beyond all things....the one meal that pleases everyone....and it is easy and fast. Except, I was taught to use pork. You don't mention putting sour cream on top, but that is essential at our house. I think they love it because it tastes exactly like pelmeni, yet it doesn't have the same level of effort!
I have a funny story. As I say, I usually make this with pork. One night all I had was beef, so I made it with beef and my son Sergei looked quizzical and said, "This is good, but the meat tastes different. Don't you usually use rat?"
I was just glad we didn't have company!

Yep, just onion will work fine here too, raw or marinated.
I don't agree about eggs, they are nice for decoration on top, but then they get dried very fast if salad is stored more than 1 day in a fridge... I don't like that. But then, I guess everybody is free to improvise, so feel free to use eggs when you cook this salad.

You can replace green onion here with just onion. It goes great with the herring (even raw, but if you don't like the taste, you coul cut onions first, put them in vinegar and leave to marinate while you cut other ingredients). And boiled eggs are essential ^^.

>> Очень необычно встретить горошек в окрошке. Очень.
Ага, похоже на оливье с квасом ^^. Кстати, а я впервые вижу, чтобы для приготовления окрошки использовался тёмный квас - обычно берут белый, на основе ржаной муки.
Never ever use sweet peas in okroshka. It is not even near original okroshka recipe. Canned sweet peas in Soviet Union were unbelivable hard to find. And (if found) can or two were usually kept for the New Year holidays to make famous "Russian salad".

These were absolutely heavenly, but I ended up adding at least twice as much flour as you suggested to get the "look" you have. We can't wait until the tvorg arrives in our EU market again, so I can make more!

I would rather think what the story talks not about kompot (the drink made from fruits), but about compote (the dessert made of fruits with sugar syrup and spices over low heat). This one should be less liquid which would make it more possible to spread over the bread.
There us an article about Compote dessert/jam on Wikipedia: http://en.wikipedia.org/wiki/Compote . Hope that helps.

Hi,
I am editing a story in which kompot is used as jam on bread. In researching, I found no mention of this. I wonder if the fruit is used as jam once the liquid has been filtered.
Thank you.

I believe vegetables boiled skin on preserve more nutrients and the texture which is important for the salads.
I also like potatoes boiled skin on, cooled down to room temperature, sliced into pieces and dressed with vegetable oil, as a side dish.

Not sure if anyone can help. I am looking for a Broscht recipe. This one is the Polish version which includes fermented Rye. My Mom use to make it. It sometimes included putting the rye or sometimes rye bread in a crock and let it sit for a few days. Not sure what other ingredients it included. Hope you can help

You are welcome :). Whan you buy the buckwheat make sure it is roasted (it will have brown color, just like on the pictures); for example in Austria they were selling no-roasted buckwheat - it was green and had different taste.

Yep, just add 1 cup of milk for 1 cup of boiled buckwheat (already cooked) and that will do it: you may also add a bit of sugar if you feel like it :)

Hi, thank you for posting this recipe! I had buckwheat for breakfast when I visited Ukraine and have been wanting to cook it myself. However, I can't remember exactly how it was cooked. Can you tell me, should I just add milk to the (cooled) boiled buckwheat to make the breakfast dish? Thanks!

Well this sounds absolutely yummy. I generally make curried eggs when entertaining but these eggs look just great. I see what you mean about learning the knack of cutting the eggs in half, but its well worth trying. Nice pictures and recipe. I love eggs and am always looking for new ways to serve them and this is a recipe that will get served up many times.

The surimi crab sticks which are usually sold in the stores are already cooked, so no, you don't need to cook them before eating. However if in India they also sell some other types of crab stick you may want to follow the instructions on the package.
