Apple, Sorrel and Lettuce Salad

December 6th, 2014 in Salad Recipes by Julia Volhina

It seems to me that sorrel isn’t something very popular in cooking in this part of the world.

But just in case if you were looking for some recipe using it, here is one: fresh raw salad with sorrel, apple and romaine lettuce dressed with lemon juice and honey.

If dressing seems too sour for you, replace some juice with water and increase amount of honey, that should do the trick.

Ham, Pineapple and Peas Salad

April 5th, 2014 in Salad Recipes by Julia Volhina

This salad has interesting combination of ingredients: sweet peas with pineapples and ham (or canadian bacon) mixed with lettuce.

Freshly boiled peas can be substituted for canned peas on this one, but canned ones are some what easier to find.

Assemble salad right before you plan to serve it, lettuce will not keep freshness and crispness for long after slicing.

Shrimp, Lettuce and Egg Salad Recipe

January 4th, 2014 in Salad Recipes by Julia Volhina

This unusual combination of ingredients yields pretty interesting salad. And it tastes best then prepared right before serving.

Original recipe calls for 10 quail eggs, but I find them somehow hard to find here, so I used 2 chicken eggs as replacement.

Pineapples themselves are optional ingredient, you can skip on them if you wish so, but with them salad tastes more interesting.

Spring Radish Salad

March 23rd, 2013 in Salad Recipes by Julia Volhina

Another spring-envy salad, probably not as light as one would want, mostly because of mayo. But in this one I wouldn’t suggest to replacing mayo with sour cream or yoghurt.

It doesn’t take much time to prepare, about 15 mins of mostly chopping. Boil eggs in advance, let them cool down till room temperature before adding to the salad.

Prepare this salad right before serving for best taste.

Lettuce, Tomato and Cucumber Salad

March 2nd, 2013 in Salad Recipes by Julia Volhina

In anticipation of the spring in early March, here goes fresh tomato, cucumber and lettuce salad recipe.

These fresh vegetables taste so good in the Spring.

Prepare the salad soon before serving, cut fresh vegetables don’t like to wait.

If you want to make dressing lighter, use light mayo and low-fat yogurt instead of sour cream.

Chicken and Celery Salad Sandwich

February 23rd, 2013 in Chicken, Main Dish Recipes, Salad Recipes by Julia Volhina

This is a base chicken and celery salad recipe for sandwich to be served for breakfast or lunch.

The salad can be prepared in advance and used when needed, just store leftovers in fridge.

You can also use grilled chicken leftovers for this recipe or cook chicken breasts from scratch.

Green Salad with Tomatoes, Avocados and Shrimps

July 16th, 2011 in Salad Recipes by Julia Volhina

This is one of the salads which uses avocado dressing from the last week recipe. It is green, fresh summer salad topped with boiled shrimps with a hint of spiciness provided by the dressing.

My advise is to assemble this salad right before you are planning to serve it: it calls for avocados, tomatoes and lettuce (all of which react to oxidation by loosing taste and pretty look).

However avocado dressing can be prepared in advance and stored in airtight container in fridge.
