My better half doesn’t like fresh bell peppers, so I do stuff them with ground beef and rice and stew for a bit and here we go, it is his favorite meat dish.

Stuffed Bell Peppers are easy and fast to do. They are being served without side dish and are tasty!

How to make, step-by step:

  1. Prepare ingredients:

  2. Take small pot, fill it with cold water, salt ad put on the burner. After water became to boil, add rice and stir it till water become to boil again. Boil rice on moderate heat for 10 minutes. Put rice to the colander and rinse with cold water. Let rice to cool till room temperature:

  3. While rice is cooling, we need to prepare bell peppers, for that: cut the top part of each bell pepper like it is show on the photo below, remove seeds and rinse it with cold water:

  4. Add cooled rice to the ground beef, add salt and black pepper and mix everything:

  5. Stuff bell peppers with beef & rice mix like that:

  6. Take big enough pot, cover each bell pepper with its ‘lid’, put bell peppers into the pot vertically and add 1 cup of a water to the pot:

  7. Now we need to prepare a sauce. For that put frying pan on the burner on the moderate heat, add sunflower oil and warm it up. Cut onions into half rings and put them to pre-heated frying pan. Fry onions for 10-15 minutes while they get yellow color (don’t forget to stir):

  8. Add chopped fresh dill to the frying onions, add salt:

  9. Put all sour cream to the frying pan, stir, reduce heat so it isn’t boiling too much:

  10. Let onions to stew for 5 minutes, stirring them:

  11. Pour sour cream onion sauce on top of bell peppers in the pot. Put a lid on the pot and put it on the burner on the low heat:

  12. After 40-45 minutes of stewing over low heat stuffed bell peppers are ready. Serve bell peppers stuffed with ground beef and rice without garnish:

    or you can cook them in the oven (just the stuffed pepper, no sauce), and also stuff mushrooms, tomatoes, zucchinis the same way and serve them with semolina or rice as side dish

    MY BAKED BELL PEPPERS. EXTRA LEAN GROUND MEAT; SHRIMP ONIONS ;GARLIC POWER; YOUR CHOICE OF CAJUN ;SPICES TO TASTE ; BREAD CRUMBS PARMESAN CHEESE AND OIL OIL. A TOMATO SAUCE OVER TOP OF PEPPERS. BAKE FOR 60 MINUTES. ENJOY
