Spinach Crustless Quiche

It is green and delicious, it is spinach quiche.

Great recipe for weekend breakfast or brunch, when you want to eat something tasty without spending too much time and effort preparing it.

If you prefer quiches baked in crust, it will work too, just bake the crust, pour mixture in and cook according to directions below.

These ingredients will fit in 9-10 inch pan. Depending on how hungry you are, it will feed from 2 to 4 people.

This is really recipe for the ham glaze: the ham is already fully cooked, and it will just need heating up and a bit of taste.

It is easy recipe for celebration table. If you want to feed more people take bigger piece of meat and increase amount of other ingredients, cooking time will need to be adjusted appropriately.

Left overs can be easily served for lunch, cold or reheated.

Friend of mine introduced this dish to me few weeks ago and since then I cooked it pretty much every week.

It is pretty easy to do, and it provides a variety of vegetables to the table as it cooks zucchini, asparagus spears and mushrooms in the same time. The batch I usually get will feed about 6 people as a side dish with no leftovers (and I don’t think I ever had any of these left over actually).

It is very important to use portobello mushrooms in this recipe, as they have distinct aroma and taste which gets transferred to vegetables as well.

This not complicated recipe is my first attempt to cook mussels. They turned out juicy and light. Thanks to Hans-Peter and his cooking lessons 🙂

Vegetables cooked this way, with wine and mussels juices, taste great as well as mussels themselves, serve them all together!

By the way, 1lb-1.5lb of mussels per serving sounds about right, this way amount of ingredients listed in this recipe is enough to feed 2-3 people.

I prepared pancakes from zucchini, but they are also good prepared of any other kind of summer squash or even mix of them.

Soft and tender vegetable pancakes, they are easy and very fast to do. Perfect dish for breakfast or lunch, or for any other “hunger feeding” quick food break.

Odds are your kids will love them (even though they consist of pure vegetables)!

Radish and Fresh Cheese Salad is a tasty way to feed yourself and your family a bit of calcium 🙂

I did have some troubles finding a suitable fresh cheese for this recipe, it should be fresh white quark (russian: tvorog), neither cottage cheese nor cream cheese will work here.

So if you have the same problem finding quark style fresh cheese like I had, try local Russian / Ukrainian / Polish store, most probably they have it. Of course, you can also make homemade soft cheese yourself.
