EnjoyYourCooking already has recipe for Lazy Cabbage Rolls casserole, this recipe variation uses almost the same ingredients, but in form of cabbage and meat patties baked under tomato and sour cream sauce.

Again, they are much easier and faster to prepare comparing to traditional cabbage rolls (this is why they are called “lazy”), but taste is very similar.

These patties constitute complete meal, but some vegetables or salads can be served along as a side dish.

Unusually tasting salad for a celebratory table or if you want to add a bit more liver in your diet (for example to consume more iron or other nutrients it is reach on).

As title says, fried liver is the base of the salad, accompanied by fried carrots and onions and boiled eggs. Probably it is not the lightest of the salads other there, but again, rich in nutrients and pretty filling.

Ingredients of the salad can be cooked and mixed together in advance, store them in the fridge and then add mayo 20-30 mins before serving it.

Chicken Salad with Cucumbers and Korean Style Carrots

Yet another one chicken salad to be added to my list of recipes: tender chicken meat, boiled eggs, tasty cucumbers and spicy carrots prepare in korean style.

This salad will work great as a side or appetizer, or as a lunch meal itself, especially if you need something to take with you. It can be served plain, in a sandwich or in a wrap.

Salad can be dressed with a mix of mayo and sour cream instead of the mayo alone, if you are looking for healthier option.

Korean style carrots (“morkovka po-korejski”) is a popular in post-USSR countries dish which is usually served as salad, side dish or relish.

Often it is also served on hot dogs along with sausage inside the bun.

These pretty spicy carrots are great side for meats or poultry. They can also be used as one of ingredients for salads and other dishes.

This is somewhat unusual dish to cook: mushroom and carrot stuffing baked inside of chicken meat “crust”.

But I assure you, it is totally worth cooking, for romantic dinner for example. Leftovers can be easily warmed up in microwave.

By the way, juices and removing casserole from the dish are a bit easier to handle if you use springform, but casserole dish would work too.

So I discovered carrots and ginger combination while working on last week recipe. And I decided to take it one step further: today with carrots and ginger soup-puree.

It is spicy, unusual and absolutely delicious. To my surprise even my better half liked it (and he is not too thrilled with either carrots or ginger).

You can use cup blender instead of hand one, if blender cup isn’t big enough to hold whole pot, just work in batches. But I must say hand blender is much easier to use here.

This is refreshing and somewhat spicy salad made with carrots, raisins and ginger.

It tastes great by itself, or with meat or poultry.

You can make salad more or less spicy by adjusting amount of ginger you use: more ginger will make more spicy salad.
