Radish and Cucumber SaladJune 2nd, 2018 in Salads by Julia Volhina
Featuring today a recipe for pretty simple limited ingredient spring salad with radishes and cucumber.
It requires up to 15 mins to prepare. Even less if you use mandeline instead of a knife.
This salad will be a good complement for a steak or some meat and vegetable entree.
If sour cream you use is thick, you can mix it with the lemon juice first before dressing the salad, that will make mixing of salad easier.
Apple and Cucumber Salad with ChickenAugust 12th, 2017 in Salads by Julia Volhina
Light chicken salad, great on its own, as a side or on the sandwich.
Chicken thighs work great in this recipe, breast would be “skinnier” option. Alternatively rotisserie chicken leftovers would do as well.
If you are cooking chicken yourself, make sure it is cooled down to room temperature before slicing it for the salad.
You can get creative with dressing here: between low fat yoghurt, mix of yogurt with sour cream or mayo or just mayo itself. Choose to the taste or/and amount of calories.
Tuna and Mozzarella SaladOctober 8th, 2016 in Salads by Julia Volhina
Tuna and Mozzarella salad is my goto light salad with a bit of protein. It works great for training days, because I don’t feel hungry after it but I also don’t feel like I eat whole bunch of unhealthy stuff.
A lot in this salad depends on the taste of tuna, so use the kind of tuna you like. If you plan to use tuna canned in oil, you may reduce amount of oil in the salad dressing to balance calories consumed.
Fresh corn they sell here in US is usually soft, sweet and juicy, so I use it for this salad myself, however canned corn works just as well.
Cucumber and Dill SaladMay 23rd, 2015 in Salads, Sides by Julia Volhina
This is my recipe for so called Polish Cucumber salad: simple salad with cucumbers, fresh dill and marinated onions.
Marinating onions makes them less bitter and removes most of that onion breath smell therefore this salad is great for parties, cookouts and such.
I am using balsamic vinegar and sour cream as dressing here. If you like, you can replace vinegar with lemon juice, but I somehow like vinegar better.
Raw Vegetables and Chicken Salad with FetaMarch 14th, 2015 in Salads by Julia Volhina
This salad is more advanced version evolved from Raw Vegetable Salad with Feta.
I added few ingredients: kale, celery, zucchini, corn, olives, mushrooms and a protein source, boiled chicken, to make things a bit more interesting.
I take this salad ingredients with me and slice them up at work for a healthy lunch. It only takes few minutes to do.
By the way, if you boil chicken right before making the salad, make sure you let it cool down to room temperature first.
Raw Vegetable Salad with FetaAugust 30th, 2014 in Salads by Julia Volhina
I am trying to eat my vegetables raw at the moment (losing some weight, trying to eat more healthy, running and such). So this is a salad which I make for myself for lunch at work to accomplish this.
It takes about 10 mins to do all the slicing and dicing. And maybe 5 more for cleaning and packing.
Occasionally I add to it raw corn, onions, spinach, lettuce to vary things up, but cucumbers, tomatoes, mini peppers and avocado are always present.
Chicken Salad with Cucumbers and Korean Style CarrotsAugust 16th, 2014 in Salads by Julia Volhina
Yet another one chicken salad to be added to my list of recipes: tender chicken meat, boiled eggs, tasty cucumbers and spicy carrots prepare in korean style.
This salad will work great as a side or appetizer, or as a lunch meal itself, especially if you need something to take with you. It can be served plain, in a sandwich or in a wrap.
Salad can be dressed with a mix of mayo and sour cream instead of the mayo alone, if you are looking for healthier option.
