These resemble chicken kiev for the part that they are chicken rolls which are stuffed with garlicky butter. But they are much easier to make and are a bit healthier: because of no breading and no deep frying.
Chicken thin cutlets cut works perfectly for this one (if you can buy it), but whole breast can be sliced into cutlets as well, it will just be slightly more work to do to make sure slices are even and there are no holes in the chicken so stuffing doesn’t leak when cooking.
Butter and cheese stuffed chicken rolls taste great when served hot, right out the oven. Good when paired with mashed or baked potatoes. Perfect for romantic or celebratory dinner.
Raw Vegetables and Chicken Salad with FetaMarch 14th, 2015 in Salads by Julia Volhina
This salad is more advanced version evolved from Raw Vegetable Salad with Feta.
I added few ingredients: kale, celery, zucchini, corn, olives, mushrooms and a protein source, boiled chicken, to make things a bit more interesting.
I take this salad ingredients with me and slice them up at work for a healthy lunch. It only takes few minutes to do.
By the way, if you boil chicken right before making the salad, make sure you let it cool down to room temperature first.

Fall is a perfect time to cook some squash. Spaghetti squash.
This recipe features spaghetti squash stewed with chicken and mushrooms in sour cream sauce. Prepared like this, this dish doesn’t require a side.
Stewed spaghetti squash will work great for dunner or lunch. Leftovers can be easily reheated in microwave.

This is a recipe for chicken salad made with crunchy walnuts and celery, dried cranberries and dressed with mayo.
It is pretty easy to do. All you need to do is to boil and dice chicken, slice celery and add rest of ingredients together.
This salad can be served as it is or on a bed of lettuce leaves as a salad entree. It also can be wrapped in a tortilla or served in a bread sandwich.

Yet another one chicken salad to be added to my list of recipes: tender chicken meat, boiled eggs, tasty cucumbers and spicy carrots prepare in korean style.
This salad will work great as a side or appetizer, or as a lunch meal itself, especially if you need something to take with you. It can be served plain, in a sandwich or in a wrap.
Salad can be dressed with a mix of mayo and sour cream instead of the mayo alone, if you are looking for healthier option.

I know that buckwheat isn’t something people in this part of the world eat. But I like it, and it is very nutritious to say the least.
I also was so pleased to find roasted version of it in stock of local Whole Foods (which I either didn’t pay attention to before, or they kind of decided to be adventures and try it), so I decided to publish an interesting recipe using buckwheat this week.
Cooking buckwheat in the same pan with chicken, onions, garlics and sour cream gives it nice taste (and makes one pot less to clean, yay!). You can serve casserole as soon as it is ready, storing it leftovers in fridge and then reheating them makes a nice lunch too.
I used boneless skinless chicken thighs for this recipe, but any boneless chicken meat will work just fine.
